Do I need to have more than one network card?

A single network card is fine; best if it can run in full-duplex mode.

Is there better performance using two network cards and creating a front-end and back-end?

With one 1Gb network card running in full-duplex, you are limited to 1Gb of total bandwidth.

With two cards (front-end and back-end, full-duplex), you can potentially have 1Gb of incoming bandwidth and 1Gb of outgoing bandwidth simultaneously.
